Butternut Squash is a winter squash and is attractive for retail, food service and wholesale markets. The combination of high altitude and volcanic soils provides  a sweet, nutty taste and vibrant orange color. Butternut Squash can be roasted or toasted and also pureed or mashed into soups, casseroles, breads and muffins. It is a good source of fiber, vitamin C, manganese, magnesium and potassium. It is also an excellent source of vitamin A.


Spaghetti squash is an oblong, mildly flavored yellow winter squash whose flesh separates into spaghetti-like strands when you cook it and run a fork through it.
